I eat eggs. During the week it's hard-boiled or egg salad. On the

weekends I indulge in scrambled with meat and veggies or an omelet

with spinach, onion, tomato and lots of spices.

During the day I eat beef - primarily sirloin tip roast or top round

roast (garlic enhanced, of course!) Vegetables are spinach,

artichoke, broccoli, asparagus or zucchini, sometimes V8 juice.

Dinner is salt-water fish: cod, sole, trout or perch. I supplement

with ground flax and cook with olive oil. Before bed I eat a bowl of

oatmeal or a piece of bread (Ezekial or spelt) sometimes with almond

butter.

I'm loosing about 2-3 pounds per week and feel better than I have in

ages. I actually started following the ER diet so that I would have

more energy and sleep better. The weight is a wonderful side benefit.
