seems if I use all spelt flour in a recipe it turns out dry and/or heavy.

First, use 1 1/4 cups of spelt flour for every one cup of regular flour called for in the recipe ie if the recipe says 3 cups regular flour you would use 3 3/4 cups spelt flour. Second, leave the spelt flour as your last ingredient and stir until just combined, no more. Spelt is very sensitive to overmixing and if it is overmixed, that is what can cause the recipe to be heavy.
