Does anyone have a recipe (while on the subject of bread) for Spelt or some other ok grain bagels? It's the only thing I REALLY crave! Holly, it seems to me you can take any bagel recipe (I have one in my handy-dandy Better Homes & Gardens cook book) and instead of using all purpose flour, use spelt flour. If you want to make rye bagels, use half rye flour, half spelt. Or use any other flour you like. I saw a PBS-type program the other day about making bagels and basically all you do after mixing the dough and creating bagel shapes is broil, boil and bake. Let me know if you need the recipe for basic bagels and I'll send it to you. You might already have one in your collection of cook books. Or, does anyone on this list have a good recipe? Just thought I'd add this to the discussion: I can't remember if I read it on the boards, in one of the books, or where, but I'm pretty sure we O's need to be careful about " sprouted " breads because, unless it's Ezekiel (or essene) there will not only be sprouted grains but regular wheat flour as well. I did check at a local store where I spotted some sprouted bagels made by the same co. that makes (to the best of my knowledge) the Ezekial bread and it DID include regular whole wheat flour along with the sprouted. Spelt flour is also not available here so would need to use rye flour as an alternative. Thanks to all and best wishes. Guest guest Posted June 29, 2000 Report Share Posted June 29, 2000 SPELT BREAD 1 1/2 cups water, 1 1/3 teaspoons yeast, 2 tablespoons rice milk, 2 tablespoons oil, 2 teaspoons sugar/honey, 1 1/2 teaspoons salt, 2 1/4 cups whole-grain spelt flour, 2 cups while spelt flour. This receipe is for a bread making machine. He says in the book to dissolve the yeast with the water and put on top of the flour but I have tried that and aslo put the yeast in first without dissolving in the water and then the flour on top of it and all the other ingred and have found that the family prefers the way it comes out that way after cooking. If you want a hand method let me know.
