I've wondered that, but if it does, it can't be by much... adding lots of fat is the only way to moderate the insulin response, AFAIK, to a significant degree. Depends on your genetics. Simplest way to test, eat a big pasta meal and see how you feel a couple hours later. If you feel great for four hours, you should have no problem eating grains properly prepared. If you crash a few hours later, you need to have fat. The sooner you crash the more fat you need. Some people probalby shouldn't have grains at all.
