Hello,

I just looked at the gem cultures site and specifically at the bread

leavening products. It looks like you can use the culture instead

of fermenting with kefir or yogurt. No commercial yeast is required

but is the end result the same as using kefir for fermentation as is

done in the NT book? The ends result being improved digestibility

and phytic acid effects being diminished?
