Mix it with some kefir, salt, granulated garlic, and black pepper. (You can use kimchi juice instead of kefir, someone told me, but I have not tried it). 3. Let it set in the fridge for 3 days or so. 4. Put it on a dehydrator. Decidedly the best jerky I've ever tasted. Several jerky afficianodos agreed with me -- now they are growing kefir just for jerky! It has a taste like pepperoni, that lactic-acid thing going for it. It looks really yecchy and one woman's husband said, after seeing the process " There is NO WAY I'm eating that! " But you can't see it after the meat is dry, and it's easier to leave it on, and it adds nutrients, and probably helps preserve the meat, and helps the spices " stick " . I love spices, and often sprinkle more on after the meat is on the dehydrator. BTW a woman from South Africa tasted this recipe and said it was the most like biltong she has had outside of Africa, except that they use a lot of cumin.
