You are *supposed* to have a bacteria in your gut that digests oxalic acid. Some people don't have it, and then the oxalic acid can latch onto calcium in your blood and cause kidney stones. I guess if I were to hazard a WAG, I'd take calcium with my spinach just in case. But I've never had kidney stones, and spinach doesn't seem to bother me. Well, actually spinach HAS calcium, so maybe they cancel out. Or maybe with all the probiotics I eat I have that bacteria. Someone is researching to develop an oral probiotic to replace the oxalic acid bacteria for people who don't have it. As for " negative ions " and all that, personally I think it's only tangentially true. If you eat meat, you need calcium to process it or you'll likely get acidic urine. If you eat grains, you tend to get bacteria in your gut that produce acid. But it isn't as simple as " acid " vs. " basic " foods. All things being equal, people who eat green vegies are healthier. You should eat them with some oil (to help the oil-soluble vitamins get used), and vinegar tastes great on a salad (and will help kill any " bad " surface bacteria).
