If you have the freezer space, go for it! If you have your own grinder,

make sure that the processor doesn't grind any of it; it'll be much fresher

and tastier if you do your own grinding, and processors apparently use some

fairly nasty detergents on their grinders which make their way into the

ground meat. Also consider making sure to get the parts that people aren't

normally interested in, like the feet, which are great for soups, stocks

and stews. Many of those parts can be ground up into sausage if you plan

to make your own.
