Hi Laurie

I have started making a ginger tea according to your recipe. The

first batch I made was great - very strong, so I kep diluting it

every time I poured a bit more out of hte jar I was storing it in. I

realised though that it didn't need the honey to taste, so when I

made it again, I left the honey out to save consuming sugar when I

couldn't actually taste it!

However, the drink is not nearly as strong this time even though it's

darker in colour. I wondered if the honey had the effect of drawing

the falvour out of the ginger pieces? What do you think? Or could

it just be the ginger was a slightly older piece of root, so it had

already lost some flavour before I started using it?

Any thoughts?
