Dumb gluten free bread question

Ok,

I am trying to cut out wheat and sugar. The huge piece of german choc. cake I

ate yesterday ( " but there was coconut on top... " ) didn't exactly help my cause,

but I AM trying.

So, I would like to make pizza crust from sorghum flour. I tried Heidi's recipe

(basically soaking the flour and adding xanthan gum to creat a paste of

sorts...) wasn't thrilled with it. My dumb question is: can I add bakers yeast

to the mix and improve the texture? Does yeast react with GLUTEN? Any

thoughts?
