I do see that it is mentioned in Sally Fallons' cookbook but since this topic was brought up i was hoping someone on the list had a technical answer on the difference. thanks. Kefir is very sour and contains some vinegar from the acetobacter in the culture. I don't think there are any acetobacter in piima; at any rate, it's a much, much milder culture, with a delicate flavor. It is still a bit sour, though, so it doesn't work for whipped cream or, I'd imagine, for other desserts. - Quote Link to comment Share on other sites More sharing options...
