My chicken breasts always come out juicy! I also use breast me in almost all my chicken soups. My favorite is enchilada soup! Yum! Anything breaded is deadly for me, even post surgery, if fact, the greasy-er it is the more likely it'll make me sick. I agree with the chicken though, it is hit or miss, depending on the 'mood' of my E. I'm severely limited on meats: I only eat beef and chicken. I can eat fish, but I don't know what to look for, have never actually bought it and don't even know how to cook it. I do not eat shellfish, veal, etc. How are you preparing the chicken? I need some ideas to " spice it up " . I don't eat chicken that much either! All my food is weighed out for the rest of the week! I'm 29 years old, and this is my very first diet ever. I'm on day 5 of the injections, just started the actual vlcd diet yesterday. I'm excited but have a lot anxiety too about the limitations on what I can eat. I'm like you, I can only do chicken and beef. Not interested in any kind of fish unless I can douse butter all over it, so that's not an option. It can be really expensive to get all the different spices. So far, I have invested in onions, garlic power, Mrs. Dash tableblend, and cinnamon (and salt n black pepper, of course). Next on my list is curry. Yesterday, for lunch I broiled chicken with lemon and Mrs. Dash tableblend. It was okay, a little boring. For dinner, I cooked ground beef in a pan with onions and garlic powder. I felt that really hit the spot. Another thing, I tried which was super yummy, was sprinkling my strawberries with cinnamon. Wow, what a treat. Never tried that one before. Too bad we only get a "handful" of strawberries, whatver that is. Can't we just go with half a cup? I have yet to experiment with herbs such as basil leaves, pesto, and parsley. That just seems too complicated to me. I like to keep it simple. I just hope I will be able to survive this. Good luck out there!
