Hopefully, someone in Australia will pipe up and offer you a SCOBY now that you have posted. To test for lead...there are home kits that can be bought at hardware or paint stores or that can be purchased on-line. Water kefir is a lacto fermented beverage which some folks are wildly successful with and others just as unsuccessful. I is considered by many to be very picky...but I have found that as with Kombucha, the secret is to brew with a few simple ingredients for the first ferment and limit the 'experiments' to second ferments and in using spare cultures. Coconut kefir is, I believe water kefir made with coconut milk as an ingredient. I think some people use milk kefir grains in its preparation. I make milk kefir and at first found it too yeasty, but after a few rounds of brewing it straightened up and now consistently make a lovely drinkable yougurt like beverage for me. Note that before I started making milk kefir, I ate my yogurt sugar and fruit free, so drinking milk kefir straight for me was not much of a jump. If no one offers you a culture in Australia...there are commercial growers that can be found by googling. A slightly larger dose if you are injecting subcutaneously might help to get you what you would absorb if you injected into muscle. The vascular system is more plentiful in the muscle and you would more easily absorb it that way. There is some speculation that if injecting into fat that you might not absorb it quickly enough to get it all before it is no longer potent. I lost 36 pounds in 43 days. You should be fine if you just follow the protocol. Good luck!
