Guest guest Posted April 30, 2010 Report Share Posted April 30, 2010 I just made this for my brunch (I had breakfast really really early..5am, so had brunch at 10am). 1 muffin cup with 1/2 cup of fresh strawberries filled me up. The recipe serves 6 or 3 (depending on appetite and whether they are a wls person ::grin: 6 thin slices ham (I used deli select honey ham @ 10 cal/slice) 4 slices 2% cheese, cut into fourths (I used 2 slices pepperjack, & 2 slices cheddar ~ and gave what I didn't use to my dogs..haha) 6 eggs non-stick veggie spray such as Pam. Preheat oven to 350. Spray muffin tin with Pam. Place a slice of ham in each cup. place two squares of cheese in each cup (I did 2 cheddar, 2 pepperjack, 2 combo) break an egg into each cup. You could add seasoning as desired at this point. I leave them plain as not everyone in my household needs extra salt. Easy enough to season afterwards. Bake for 20 to 25 minutes until eggs are set to your liking. I didn't figure all the nutritional info, but the calorie count, using my lower fat, lower cal changes ..should be about 106 to 110 calories per muffin cup. Original recipe has more detailed info.
