I just made this for my brunch (I had breakfast really really early..5am, so had

brunch at 10am). 1 muffin cup with 1/2 cup of fresh strawberries filled me up.

The recipe serves 6 or 3 (depending on appetite and whether they are a wls

person ::grin::)

6 thin slices ham (I used deli select honey ham @ 10 cal/slice)

4 slices 2% cheese, cut into fourths (I used 2 slices pepperjack, & 2 slices

cheddar ~ and gave what I didn't use to my dogs..haha)

6 eggs

non-stick veggie spray such as Pam.

Preheat oven to 350.

Spray muffin tin with Pam.

Place a slice of ham in each cup.

place two squares of cheese in each cup (I did 2 cheddar, 2 pepperjack, 2 combo)

break an egg into each cup.

You could add seasoning as desired at this point. I leave them plain as not

everyone in my household needs extra salt. Easy enough to season afterwards.

Bake for 20 to 25 minutes until eggs are set to your liking.

I didn't figure all the nutritional info, but the calorie count, using my lower

fat, lower cal changes ..should be about 106 to 110 calories per muffin cup.
