i also use crumbled blue cheese (gorgonzola is my fav) on salads,

along with walnuts. i also like to have mini meals spread out during

the day vs three big ones (i think that helps with diabetes) -- and

so i try to have protein with every one. i also love tsaziki -- the

greek yogurt sauce with cucumber -- i use that with meat, fish, etc.

-- it also helps soften them up!

Note that Sandy means CRUMBLED BLUE CHEESE, not Blue Cheese Dressing,
