However, I would not be a proponent on using it for " everything " . We need a broad spectrum of oils. Since it is saturated it is a " heavier " , " thicker " oil. It is more stabilizing (binding) in the presence of certain proteins, which could give it more of a propensity to form masses than say a mono unsaturate. I am definitely not recommending the elimination of coconut oil from your diet just the reduction from the main fat. Adding thin viscosity cold pressed oils such as apricot kernel, walnut, etc. for use in non cooked dishes (like salads) or applied to dishes after the cooking process might be helpful.
