You may recall that in, Dr. Skibola's email, she mentioned that she was referring my letter to Dr Jane Teas for information about the iodine in seaweed. I have just received the following email from Dr. Teas, together with the following research report on the iodine amounts in different seaweeds:

Variability of Iodine Content in Common Commercially Available Edible Seaweeds Jane Teas, et al, 2004. Article. "Altogether, 12 different species of seaweeds were analyzed for iodine content, and found to range from 16 microg/g (+/-2) in nori (Porphyra tenera) to over 8165 +/- 373 microg/g in one sample of processed kelp granules (a salt substitute) made from Laminaria digitata....Iodine is water-soluble in cooking and may vaporize in humid storage conditions, making average iodine content of prepared foods difficult to estimate."

On the front of the article is a impactful chart showing the amounts of iodine in different forms of seaweed. I know that I had read how much more iodine is in kelp than in other seaweeds, but the chart really made me appreciate that fact.

You'll note in her email that she has a paper on iodine and breast cancer about to be published.

Re: Iodine and Estrogen/Progesterone

Dear Dr. ,

I have a paper on iodine and breast cancer that I have submitted to a journal, and will send it to you as soon as I hear from the journal that it has been accepted. In the meantime, here is the article I wrote on seaweed and iodine.

Best Wishes,

Jane

pages, but each one wanted me to pay to view the full text.

will work for you. If it doesn't, go to the Files section under

Iodine in Food.
