What about in pumpkin pie? I've been making it with

maple syrup instead of brown sugar, but it tastes kind

of bland. I more than doubled the spices and added

extra salt, but it just isn't as delicious as it could

be. . .

Have you tried Muscovado sugar or Rapidura. It is like brown sugar but has

not been processed.

Hi and Sheila,As nne pointed out to me recently, a really good substitute for sugar is agave. It has a low glycemic index which means no sugar rush. It's extracted from a plant in Mexico which I think is similar to cactus. I've been experimenting with it for a week or so and have made really tasty scones with it. Thanks for that Sheila. I will probably stick with the agave for now

since it is easily available but it's very useful to know of other

options.

The agave comes from the same blue cactus that tequila is made from - just a little info for you. Bella if you can find a good HFS that sells agave, it is often cheaper than Tesco, I buy mine when I head for Infinity Foods in Brighton and they have one that costs just £1.99 instead of the £2.99 that you pay in Tesco, what is even better is the fact that it is in a glass bottle, better for our carbon footprint and I hate plastic if I can avoid it I will because it leaches into the product sometimes and I hate that thought.
