Guest guest Posted March 26, 2010 Report Share Posted March 26, 2010 I'm eating the stuff right now for breakfast. ;o)You can adjust it however you prefer. Some like cilantro, some don't. So change spices to your tastes.1/4 tsp Cumin1/4 tsp Pepper1/2 tsp Salt (I add a bit of Kosher salt as well) 1 tsp Chili powder1/4 - 1/3 Cup Garlic (or plain) EVOO2 tbsp chopped Cilantro (or more)1/2 tsp Paprika (optional)1/4-1/3 tsp Garlic (I use fresh chopped, 1 clove)Mix the above well, let sit while you chop veggies 1 Cup Black beans (I use fresh, not canned, easy-see below)1 Cup Diced Roma Tomato1/4 Cup diced Red bell pepper1/4 Cup diced Green bell pepper1/2 Cup diced Red or Yellow Onion1/3 Cup diced Celery 1 finely diced Chili (I don't care for heat so I use a Serrano)If you want more color add 3/4 Cup Corn but I usually don't due to the starchFold in each of the above items to the dressing one at a time coating each veggie well. Chill for an hour or more and enjoy! This is my favorite.I slice up those miniature roma tomatoes and put them on paper towel to soak up the extra H20. Meanwhile, am heating up a bit of olive oil. Olive oil must be kept at a relatively low temp; if it starts to smoke it is no longer the healthy stuff we need it to be. OK, then I slice up and add the tomatoes. (If the tomatoes are too wet the olive oil splatters so that's another reason for my tomato procedure).Then when they are cooked a bit I dump in a cup of either lentils, black beans, garbanzos (that I have batched cooked previously) and about a cup of cooked brown rice. If these items had been refrigerated I let them heat up a bit and then I add 2 to 3 cups of uncooked spinach and toss it around until the spinach is cooked.Sometimes I'll also add a cut up sunshine burger or veggie cakes.When I cook up beans / lentils I usually add a ton of garlic and onion and substantial cayenne pepper. Or curry and cumin. And sun-dried tomatoes.
