True to my intent I made a lentil and brown rice soup tonight for dinner. Good stuff!

1 1/2 c lentils

1/2 cup brown rice

1/2 onion, chopped

1 cup parsley, chopped (stems too)

1 cup sliced celery

1/6 small cabbage, chopped

4 garlic cloves, chopped

handful dried summer squash

large handful dried tomatoes

fresh ground black pepper to taste

Water to cover and simmer until rice is done. Ladle into a big bowl and sprinkle top with caraway seeds, ground cumin and a dash of habanero hot sauce. MMMMM

I probably could have squeezed some lemon on top too. Will do that tomorrow with left overs.

I know next year I am going to dry a lot more summer squash. They really simmer up well in this! I am pleasantly surprised.
