I made it, but since I'm not a vegetarian I used chicken stock and tossed in a handful of shredded frozen turkey from Thanksgiving. Spinach and tortellini soup Olive oil 2 cloves garlic, chopped or smashed 1 small onion, chopped 4 cups vegetable broth 10 oz package of frozen spinach 1 small package fresh cheese tortellini 1 can chopped tomatoes, plain or flavored basil & olive oil Lightly brown the onions and garlic in a heavy pot. Add the other ingredients. Simmer for ten minutes. Serve with a sprinkling of fresh parmesan.
