Guest guest Posted December 7, 2006 Report Share Posted December 7, 2006 Carrot Cake (Raw)(wedding cake style) Smooth and Satisfying, with a deliciously creamy frosting. Decorate this cake by sprinkling cinnamon over the frosting.Start with the Cake, blend the carrots in a food processor until well grounded. Set aside in a large bowl.Step 2, blend walnuts until fine, remove from the food processor and place in the bowl of carrots.Step 3, place dates in the food processor and blend until smooth.Step 4, add the cardamom, nutmeg, cinnamon, and ginger and blend well.Step 5, add the mixture of dates and spices in the food processor, and add the carrot, walnut mixture. Now blend the entire mixture until smooth.Step 6, remove from the processor and stir in the raisins. Place the mixture in a pie or cake pan. For the Frosting, place the frosting ingredients in a blender or a Vita- Mix and blend until smooth. After blending, spread the frosting on to the cake.
