Guest guest Posted November 12, 2006 Report Share Posted November 12, 2006 This was last night's dinner. For those of you who follow recipes, I did my best to remember how much of each. I meant to toss in some lentils near the end, but I forgot to put them in. The black eyed peas gave it enough of an earthy flavor that I was striving for. Mixed Bean Pot 1 cup small red beans 1 cup small white beans 1 cup black eyed peas 1 cup celery, cut into 1/4 to 1/2" pieces 2 carrots, cut the same 1 cup parsley, stems included, cut the same 1 medium onion, cut the same 2 large cloves of garlic, minced 2 tablespoons fresh thyme, chopped Salt and pepper to taste Hot pepper if you like it, I left it out because of DH Water to cover by 1" Toss all into a pot and bring to a boil. If you want it soupy, use more water. I left it so the water would just cover the beans when they were cooked. Simmer until beans are soft. Adjust seasoning to taste. Serve in big bowls to hungry people on a cold day.
