That sounds great, Gayla!! Marilyn has been making split pea soup

about once a week these days. Comfort food. Gotta love it!

Sounds yummy, Gayla. Here’s one I

made yesterday (not cold in south Florida,

but rainy and grey, so good soup weather):

Spinach and tortellini soup

Olive oil

2 cloves garlic, chopped or

smashed

1 small onion, chopped

4 cups vegetable broth,

canned or cubes

10 oz package of frozen

spinach

1 small package fresh cheese

tortellini (I like the multicolored ones)

1 can chopped tomatoes,

plain or flavored basil & olive oil

Lightly brown the onions and

garlic in a heavy pot. Add the other ingredients. Simmer for ten minutes.

Serve with a sprinkling of fresh parmesan.

Even better for lunch the

next day.

I used chicken stock instead of vegetable

stock (I’m not a vegetarian) and I threw in a handful of frozen shredded

turkey left over from Thanksgiving. It was absolutely scrumptious with the

garlic bread my dh made, and I have enough left over today so I don’t

have to cook during football.<G>

I forgot to add water to the blender so everything would get blended. Duh! Too full to think. But you smart ones out there in the cyber-kitchen would figure it out.
