Split pea soup was dinner: > Put in a blender: > 1 carrot, in big slices > 1 1/2 stalks celery, big slices > 1/2 onion, sliced > 4 cloves garlic > Blend until all ground up. Put in a pot with about 3/4 pounds of split peas and enough water to cover well. Simmer until peas are cooked, adding water sa necessary. Add salt if wanted, pepper to taste. Here’s one I made yesterday (not cold in south Florida, but rainy and grey, so good soup weather): Spinach and tortellini soup Olive oil 2 cloves garlic, chopped or smashed 1 small onion, chopped 4 cups vegetable broth, canned or cubes 10 oz package of frozen spinach 1 small package fresh cheese tortellini (I like the multicolored ones) 1 can chopped tomatoes, plain or flavored basil & olive oil Lightly brown the onions and garlic in a heavy pot. Add the other ingredients. Simmer for ten minutes. Serve with a sprinkling of fresh parmesan. Even better for lunch the next day. I used chicken stock instead of vegetable stock (I’m not a vegetarian) and I threw in a handful of frozen shredded turkey left over from Thanksgiving.
