Kombu is a very hard seaweed meaning it takes for me long time to soak. I love wakame for soups. In today's newsletter Elaina Love writes " Ryvka who runs the Pure Joy Store loves to make hot miso soup. She starts by combining 1 Tbs. light miso with 1 1/2 cups hot water. Then she'll add some fresh veggies like raw carrots, broccoli, finely chopped kale and some kombu pieces or seaweed of choice. For a little extra belly warmth and invigoration she'll add a little grated or juiced ginger. The hot water will warm and soften the raw veggies without destroying the enzymatic properties. Mmmmm...
