Question on soaking nuts

Hi all,

Well, I am going all out this Thanksgiving to make a completely raw

dinner for my non-raw family. :-) It should be interesting.

Anyway, I have basically stuck to eating salads, whole fruits, and some

nuts out of hand, so this is new for me, too. So I am wondering if

anyone can tell me how much water I should use to soak, say, walnuts. I

am soaking 6 cups of walnuts, and I added 8 cups of water. But it looks

to me as though they will probably soak that up pretty quickly, and

since I have understood that the purpose of soaking is to be able to

pour off the water, with the digestive inhibitors in it, I am thinking

that perhaps I should double the water. What do you think? What has been

your experience?

Basically all you have to do is cover your nuts or seeds with filtered water (about twice as much water), and let sit over night. Soaking doesn't matter in how much water, just enough to cover completely. You are going to pour that water off before using the nuts.

Do not use any nut soak water, ever. That's where all the enzyme inhibitors are that you are trying to get rid of.

What about almond milk? Soak nuts, toss them in the blender.....??????

No dear, soak them overnight, drain, rinse, put in blender add FRESH water and make nut milk.

Enzyme inhibitors are deactivated by water. So using the water is no big

deal with the exception of walnuts of course. Why? Because of all the

tannins that are leached out of the walnuts. Too astringent for the body.

Actually I am not too certain about this whole enzyme inhibitor idea. I

am wondering if maybe seeds don't sprout because they need water.

Enzymes need water to work and once the seeds are dried out there is not

enough water for them begin the process of seed sproutage (new word).

This is not because of enzyme inhibitors, it is because of lack of

water. However, I cannot prove my theory so we will stick to the enzyme

inhibitor dogma until further scientific research either collaborates my

thoughts or not. Personally, after many a long day contemplating and

reflecting upon this concept of enzyme inhibitors inhibiting ones own

bodily enzymes I have rather come to the conclusion that this just isn't

so. No where in history has anyone ever had to soak seeds and nuts

before eating. Grains are a different story as they aren't actually a

food for humans and our bodies don't tolerate them very well. However,

don't let me stop any of you from soaking those nuts, seeds and grains.

Just sharing some of my wonky thought processes.

Isn't Rejuvelac basically the water the wheat berries are soaked in?
