Gayla, I was trying to avoid drying the tomatoes and thinking maybe doing that for pizza with the veggies if need be. I dried a bazillion tomatoes, apples, squash, figs, etc last year. Stored them in freezer quality zip lock bags. No problem with them at all. I dried them pretty dry and soak a little if need be when I use them.

This year, I am going to dry some garlic so I can make my own garlic powder. I have a large braid from a neighbor and it won't last unless I do something with it.

Just a note - storing garlic in olive oil unrefrigerated can create botulism. That's why I want to dry it.

Yes, zucchini, yellow squash, all of them. This year I has things happen so I did not get time to harvest and dry them. Next year I plan to slice very thin, sprinkle with garlic, cumin, chili powder, or what ever the mood dictates and dry for chips.
