You could try using Japanese eggplant, sliced very, very thin, sprinkled with seasoning and dehydrated. Eggplant chips! Really boring. Maybe the Japanese style is better though I doubt it. I have eaten it raw by itself, cut up into a salad with no dressings and have had it with olive oil/lemon dressing.
