I never eat eggplant under any circumstances, because it does not agree with

me. You could try using Japanese eggplant, sliced very, very thin, sprinkled

with seasoning and dehydrated. Eggplant chips!

Raw eggplant can be eaten..well..raw. However, it tastes pretty much

like I would imagine a sponge would taste like. Really boring. Maybe the

Japanese style is better though I doubt it. I have eaten it raw by

itself, cut up into a salad with no dressings and have had it with olive

oil/lemon dressing. Still reminds me of a sponge.

Just my experience.

My grandma would salt the eggplant slices

and rinse them after an hour or so. She said it took some of the bitterness

out. Perhaps this would help the taste raw too? Just a thought.
