Savory Italian Tomatoes

I put the dried tomatoes in glass jars or plastic jars that something else came in and keep them in the basement in a metal cabinet so they are always in the dark. Last year's tomatoes are as bright red as the day they come out of the dehydrator.

I just use the bottled Italian herbs that I buy at the grocery store's spice department. About a month ago I didn't have any Italian herbs so used some basil, thyme (maybe, I can't remember for sure) and maybe some...humm, I really can't remember. I just looked through my spices and used what appealed to me. It's a very forgiving recipe.

no has a recipe similar to this that I make. It calls for cherry tomatoes cut in half and dried to just rubbery. Then I cover them in oil, garlic, and Italian seasoning, put in glass jar and keep in the refrigerator. I have to hide them in the back as the big boy child thinks they are a main course!

Lynne I love forgiving recipes. Since I cook by tossing things together, not measuring, they suit my style.

For Italian, I use thyme, rosemary, basil and oregano. Parsley too.

Lynne, Thanks so much for ideas plus your ways of storing the tomatoes. In past I have even bought dried tomatoes and stored in freezer as well as refrigerator. I have put my own into zip lock bags and pantry but have to watch out for mice which occasionally enter into this country setting when the neighborhood cats are sleeping. Talking mice talk: they have no boundaries and even ate through my stored "teflex" sheets that were not not in dehydrator but stored in an area I was safe and wrapped well. They made a few nice circles on each sheet so I work around them and the sheet.
