Guest guest Posted October 10, 2006 Report Share Posted October 10, 2006 Zucchini Chili 2 medium zucchini - chopped4 medium carrots - chopped1 medium green pepper - chopped2 garlic cloves (cut up)1 15 oz can garbarzo beans2 15 oz can organic (zesty) chili beans1 1/4 oz can sliced black olives1 1/2 tsp of cumin12 oz jar medium picante sauce (or add your own homemade)1 28 oz can cut-up tomatoesCashews and shredded cheddar cheese Saute zucchini, green pepper, onion, carrots and garlic in olive oil until crisp and tender. Combine tomatoes, picante sauce, cumin, black olives, beans, and sauted vegetables in crock pot. Cook on high for one hour and then reduce heat to low for 2 - 3 hours. (You may elect to serve after the hour instead) The cashews and cheddar cheese are added when being served. Serves approx. 8 - 10 people This can be made raw or lightly heated Suzi What is a weed?
