Guest guest Posted May 22, 2006 Report Share Posted May 22, 2006 1 medium-large zucchini, diced very finely1 clove garlic1/4 cup coarsely torn or chopped fresh basil 3 Tbl. pine nuts3 to 4 Tbl. extra-virgin olive oil In a mortar mash the garlic with a pinch of salt, if desired. Work in the basil and pine nuts until smooth. Work in olive oil, then very finely chopped zucchini. Serve as a relish or dip.
