Guest guest Posted June 2, 2005 Report Share Posted June 2, 2005 Since rejoining Weight Watchers a month ago (where I have lost 8.8 pounds!) I am constantly looking for new food ideas. I heard of a snack yesterday which on the surface is very strange.. but quite yummy and I think a good choice for us MGB'ers. Roasted chickpeas. 1 cup of chickpeas has 286 calories, 3 grams of fat, a whopping 11 grams of fiber and even better --- 12 grams of protein! I thoroughly rinsed, drained and dried a can of chickpeas (garbanzo beans). I tossed them in a zip lock with a teaspoon or so of olive oil and 1/2 pack of garlic and herb Good Seasons salad dressing mix. I roasted them for about 35 minutes in the oven - stirring them several times and watching them towards the end because they will burn. I salted them as soon as they came out of the oven. They come out salty and crunchy - like a " corn nut " if you have ever tried them. They are quite filling and I think a good snack. I will also be trying different spice combinations - have even been told you can even toss them with splenda, etc. and make them slightly sweet and crunchy. Will have to try them – I actually have chickpeas in my pantry – was going to make hummus but with these I won’t have the need for the bread that accompanies hummus! I did 450 for about 40 minutes and some of mine were actually too done and had to be thrown away -- yet some were still " soft " in the middle.
