A new snack find...

Since rejoining Weight Watchers a month ago (where I have lost 8.8

pounds!) I am constantly looking for new food ideas. I heard of a snack

yesterday which on the surface is very strange.. but quite yummy and I

think a good choice for us MGB'ers.

Roasted chickpeas. 1 cup of chickpeas has 286 calories, 3 grams of fat,

a whopping 11 grams of fiber and even better --- 12 grams of protein!

I thoroughly rinsed, drained and dried a can of chickpeas (garbanzo

beans). I tossed them in a zip lock with a teaspoon or so of olive oil

and 1/2 pack of garlic and herb Good Seasons salad dressing mix. I

roasted them for about 35 minutes in the oven - stirring them several

times and watching them towards the end because they will burn. I

salted them as soon as they came out of the oven. They come out salty

and crunchy - like a " corn nut " if you have ever tried them. They are

quite filling and I think a good snack. I will also be trying different

spice combinations - have even been told you can even toss them with

splenda, etc. and make them slightly sweet and crunchy.

They are definitely a keeper in my recipe collection.

Those sounds pretty good --- are they are HARD as a corn nut once roasted?

Will have to try them – I actually have chickpeas in my pantry – was going

to make hummus but with these

I won’t have the need for the bread that accompanies hummus!

Thanks for the tip – Kathy

Thanks for the chickpeas recipe, -- they sound delicious! I

think I'm going to try them tomorrow.

What temperature did you set your oven on?

There is also a new protein cookie out (have not tried it yet) that has

20 grams of protein. It comes in four favors.

I used 450 ... but some of the recipes I saw said 350. The time

actually ranged from 20 minutes to 45 minutes.

I did 450 for about 40 minutes and some of mine were actually too

done and had to be thrown away -- yet some were still " soft " in the

middle.

It may take some trial and error -- but I bought four more cans at

the store tonight!
