Simple SolutionHere is the perfect simple salad for a winter’s night, sweet enough to delight children, healthful enough to please you, and cheery and colorful enough for everyone. Carrots, fresh parsley, and a simple garlic vinaigrette make such sweet music, tucked up in a salad bowl together! The color is reminiscent of the brilliant winter sunset, and the antioxidant beta carotene of the main ingredient--as well as the germ-busting power of garlic--will help to keep you and your family healthy in the new year. INGREDIENTS 3 large carrots1/2 bunch fresh parsley leaves, stems removed1/2 clove garlic2 teaspoons red wine vinegar2 tablespoons light olive oilSalt to taste 1. Peel the carrots and grate them into a salad bowl. 2. Wash and dry the parsley leaves, then chop. Add to carrots. 3. Peel the garlic clove and use the tines of a fork to make a garlic puree. In a small bowl, mix garlic puree, vinegar, and olive oil together, whisking to combine. 4. Add vinaigrette to carrot mixture in bowl, adding salt to taste, and mix thoroughly. Serves 4.
