Zucchini recipes

Every week I have a goal...this week it was to learn to cook with more

veggies and to learn more about protein and incorporate more veggies into my

meals. So I am sending to my local list recipes that I either have made or

find and thought this list might like them as well. If not, well, you know

the drill...hit delete!

Here they are, Enjoy!

Zucchini Lasagna

I don't have the recipe, but have made it so many times I kinda feel my way

with measurements, so this is not exact on the bisquick...just get it where

it looks clumpy, K?

You will need

LF Bisquick

1 egg

2 decent sized zucchinis

1 lb of lean hamburger meat...could work with ground turkey but I haven't

done it

1 jar or can or the same amount homemade for you Martha types...(ps

if that is YOU send me a jar will ya?)

Parmesan cheese

Okay, spray a casserole dish LIGHTLY with pam or whatever spray you use

(walmart brand canola here) Layer cut up lengthywise zucs, about a 1/4 inch

thick across the bottom of pan, then sprinkle 1/4 cut bisquick over

them....THAT I remember exactly. Take COOKED hamburger meat (crumbled like

for spagetti sauce) (can be cooked with onions, I use seasonings and onion

salt on my meat or dried minced onions, knock yerself out) and spread over

zucchini and bisquick. Pour spagetti sauce over hamburger. Mix Bisquick,

about 1 1/2 to 2 cups, one egg, 1 cup milk until this is spreadable but still

doughy and clumpy ...dump it by the spoonful until all is covered. Take

about 1/4 cup to 1/2 a cup of parmesan cheese (I use the ground kind, but if

you are feeling wealthy, u could use the freshly grated and it would be

WONDERMUS and I would help you eat it!) and sprinkle this over the top.

Bake at 350 for 30 minutes or until the top is slightly browned or to your

liking...

This dish is VERY good. Even those who hate zucchini like it and will eat

the zucs usually and say OH that is good ....it is a very easy dish but

people are pleased with it because it is different and the mingling of the

sauce and the zucchinis is great.

Okay my other recipe...easy as pie, great sidedish

" Fried " zucchini sticks

Cut zucchini, as much as you want, about half of one per person, into

6ths...cut first in half, then make two length wise cuts to make 3 pieces of

each half...or heck have em in rounds if you want, but that will have more

breading and more fat...up to ya

roll in beat egg white or eggbeaters if that's your thing. Then roll in

breadcrumbs (I use walmart brand, 97 cent Italian style and mix parmesan into

it and a little garlic salt) and bake for about 10 min. at 350 then turn your

oven to broil and stick them in broiler for about 2-3 min for browning.

Serve with marinara or ranch...YUMMY.

Okay that's my two favorite zucchini recipes. Hope you try at least one some

day because you will enjoy them!

Thanks for the recipes. I never thought about using sliced zucchini instead

of the noodles in lasagna and it sounds yummy. My husband loves zucchini in

any form but especially with tomatoes! Thanks again.
