Apparently you can do a version of 'chai': ginger root, cinammon sticks in black tea and coconut milk added at the end. Another idea: cranberries and ginger root and stick of cinammon simmered 10 mins in water. Add tea bag and steep for 10 mins then add legal apple cider not from concentrate. I do slices of ginger in hot water with fresh lemon juice. Dandelion coffee is nice (make sure you get the pure root and not a ground version with lactose). Peppermint tea is good. Don’t buy already shredded cheese.) Butter, at least 1/2 cup, melted Note: I use about one part parmesan to four parts almond flour. For example, 1/4 to 1/3 cup parmesan to 1 cup flour. I just estimate how much flour by the amount of chicken I am using. I usually underestimate and end up mixing more because I hate to waste leftover almond flour. Preheat oven to 350. Mix almond flour, salt, pepper, optional garlic powder and optional parmesan cheese. Dip chicken in melted butter then thoroughly dredge in almond flour mixture. Place chicken pieces in an ungreased baking dish. If I have a bit of leftover almond flour mixture, I will pat some of it on top of the chicken in the dish, but not too generously. Use any remaining butter to drizzle over the top. If I don’t have any extra butter, I melt another couple of tablespoons for this purpose. Bake uncovered for 45 minutes to 1 hour. Chicken should be fork tender. Stir in rest of ingredients and heat through. If your stock is nice and rich, you should not need additional seasoning, but test to see if you want any more salt. Serve in a gravy boat. Note: I had a lovable but eccentric elderly relative when I was growing up who was very serious about naming her recipes. We all were highly amused at her colorful titles. Well, I followed her tradition, first as a joke—no ill intentions, just as sweet, funny memories. Now with my own children, I name my recipes with sometimes silly or outlandish names for their amusement. And they always ask and always laugh, even if they roll their eyes at me. Mix all ingredients well. Shape into small meatballs, barely 1 inch in diameter. Place on baking pan. Cook about 25 minutes until browned and well done, but not crunchy. Place all soup ingredients and cooked meatballs in a slow cooker. Cook on low all day (6—8 hours or longer). Vegetables should be tender. If I don’t get to the recipe in the morning, I will cook it in a kettle on top of the stove. You just want the flavors to blend and the vegetables to soften. Serve with more grated parmesan. Diane Salo <iplay4jane@...> Just Peachy Coffee Cake Cake 6 tablespoons butter, melted 1/2 cup honey 3 eggs 1/2 tablespoon legal vanilla 1 teaspoon cinnamon 3 1/2 cups almond flour 1 teaspoon baking soda 12 ounce bag frozen peaches, chopped (I let the peaches slightly thaw and then chop them while still partially frozen. This comes out to about 3 to 3 1/2 cups. If I let them thaw completely, it reduces to about 2 to 2 1/2 cups. Topping 1/4 cup butter 1/4 cup honey 1/2 tablespoon cinnamon 1/2 or 2/3 cup sliced almonds, toasted if you wish (The measurement depends on which store I go to. One store has 1/2 cup packages, the other has 2/3 cup packages.) Prepare the topping by warming the butter and honey until the butter is melted. Stir in the cinnamon and toasted almonds. Set aside. Preheat oven to 350. Butter a 9 x 13 pan. (I strongly prefer shiny silver baking pans.) Mix all ingredients in order listed, mixing well after each addition. I add the baking soda after I have mixed in the first cup of almond flour. Spread batter in prepared pan. Spread batter with topping. Bake for about 30 minutes. The time seems to vary a bit depending on which fruit you use. Note:This is my favorite baked good. (Well, next to the peanut butter brownies in BTVC.) You can substitute the peaches with a 12 ounce bag of frozen blueberries. Keep the blueberries in the freezer until time to mix them into the batter. You can also do half peaches and half blueberries. Any way you do it, it comes out well. Our Christmas Eve brunch menu will be Just Peachy Coffee Cake, omelets, Sunny Winter Fruit Salad and grape spritzers. Diane Salo <iplay4jane@...> Sunny Winter Fruit Salad This has been a favorite of ours for years. I used to use sugar to take off the tart edge, but hallelujah for honey. When I section the oranges and grapefruit, I cut off all the peel and pith. Then I cut out the sections out individually. My mother in law just chops up the peeled fruit, but I like to make the extra effort so that there is no chewy membrane. The citrus of the oranges and grapefruit keeps the apple fresh, so the salad lasts longer than you would expect. This makes it possible to make the salad two days in advance which I always do to avoid as much rush as possible before a holiday meal. The recipe is based on proportions, so decide how many grapefruit you want to use and go from there. For each grapefruit use: 2 oranges, prepared as described above 1/2 red delicious apple, peeled, cored and shredded 8 red, seedless grapes, halved lengthwise Honey to taste Mix the above ingredients. I usually throw in an extra apple, especially if they are really crisp and sweet. Stir before serving to make sure the honey is incorporated as much as possible. Diane Salo <iplay4jane@...> Peanut Butter Banana Cake 2 small very ripe bananas, mashed 1/2 cup legal peanut butter 1/2 cup butter, melted 3/4 cup honey 3 eggs 1/2 tablespoon vanilla 3 cups almond flour 1 teaspoon baking soda Preheat oven to 350. Butter a 10 x 15 pan (jelly roll pan). A 9 x 13 pan may be used. Mix all ingredients in order given. Add the baking soda after one cup of almond flour has been mixed in. Spread batter in prepared pan. Bake 10 x 15 for 18—20 minutes. Bake 9 x 13 pan for 20—22 minutes. Mix well. Place mixture in an oiled 1-1/2 quart casserole dish and bake in 350 degree oven 1 hour. Or .place by tablespoonful in oil in skillet and fry until golden on each side. Cook on simmer (50% power) for 9 to 12 minutes. Remove each cup as it begins to bubble, and is almost set in center. Let stand for 5 minutes before serving. Serve warm or cold. " julie " <julie46250@...> Spinach Crackers 1 bag of baby spinach (pre-washed) 3/4 cup almond flour 3 cloves of garlic, minced 2 Tbs ghee (or butter or oil) you need this much to make them crispy 1 Tbs water salt to taste Pre-heat the oven to 350F 1. In a frying pan melt ghee 2. Add spinach, garlic, water and salt. Cover and cook till wilted and the water is evaporated 3. Take from the heat and mix in almond flour 4. Spread on a cookie sheet lined with parchment paper. It should be very thin, about 1/8 " 5. Bake for 25 min. 6. Remove from the oven and carefully cut into small squares without lifting it from the sheet. 7. Lower the oven to 170F and bake (dry) for about 60-80 min. They are very crispy and hold well together.
