About the RECIPES for the WEEK,

So everyone knows, all of the recipes on this list is going to be Gluten free. However they are not all Casein free. For GFCF members Look for the recipes without dairy cheese, or whey. All the recipes are legal for the scd diet or even anyone on the Akin's diet as well. They are great recipes that the whole family would enjoy!

Stuffed Mushrooms!!!

Core the mushrooms, chop up stems and stir fry them with whatever you like. I use garlic, and herbs, s and p and then when done add parmesan cheese. Spoon into the mushrooms and bake until they look done.

Green Noodles and Cheese

For each serving:

1 zucchini peeled

2 cloves of fresh garlic, minced

1 large pat of butter

dried oregano to taste

salt and pepper

2 rounded heaping tablespoons almond flour

2 oz. favorite yellow cheese

Cut the peeled zucchini into long flat strips. Place on a few thicknesses of paper towel and squeeze out the moisture. Heat a 6" skillet and add the butter. When it foams, saute the garlic over medium heat until soft. Add zucchini, and saute, stirring with a wooden spoon. Add the almond flour, cook and stir another 2 minutes. Add the cheese and stir. You can remove from the heat and stir gently until cheese melts.

"Pizza Pocket"

Take a long rectangular piece of cheese. Top it with anything you like and fold it so the filling is covered. Broil until it bubbles and starts to brown. Cool five minutes and you can pick it up and eat it without a plate or utensils.

Zucchini Scrambler

Can be served for breakfast, lunch or dinner for comfort food.

1 large zucchini peeled and cut vertically into long flat strips

1/4 onion, sliced thin

2 tablespoons oil

1 extra large egg well beaten

salt and pepper

Fine herbs to taste (rosemary, oregano and basil)

1 oz. legal hard cheese like Swiss or Cheddar, shredded

1 tablespoon almond flour

Heat oil in a 6" skillet. Add zucchini and onions and cook until it begins to brown stirring and turning. Add seasonings and almond flour.Ad egg and cheese and continue to stir until egg is done. Remove

to a plate and cool 3-5 minutes. You'll have to scrape the pan well and give it a hot soak.
