Guest guest
Zucchini Zucchini and carrots cut into slices, dipped in egg then almond flour and sauteed in olive oil? Maybe some grated cheddar cheese over it? " dorothy smith " <dvf1802@...> New Year’s Eve Gelatin 1 tablespoon unflavored gelatin 2 cups cold legal grape juice, white or purple, divided use 2 tablespoons honey 2 cups club soda (or champagne if it is legal) 8 fresh strawberries, hulled, optional In a small saucepan, sprinkle gelatin over 1 cup cold grape juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Add honey and continue stirring for one minute. Remove from heat; stir in remaining grape juice. Cool to room temperature. Transfer gelatin mixture to a large bowl. Slowly stir in soda or champagne. Pour half of the mixture into eight champagne or parfait glasses. Add one strawberry to each glass (optional). Chill glasses and remaining gelatin mixture until almost set, about 1 hour or up to 2 hours. Place the reserved gelatin mixture in a blender. Cover and process until foamy. Pour into glasses. Chill for 4 hours or until set. Notes: 1. This presentation of this recipe in stemmed wine glasses is beautiful, festive and fun. 2. The club soda will lose its fizz, so this recipe should be made in the morning of the day you are going to serve it. 3. This is an adapted recipe from a holiday cookbook. The original recipe calls for champagne in place of the club soda. I didn't try to figure out if there is a legal champagne, I just used the club soda. 4. The original recipe uses white grape juice. I know that Welch's white grape juice is supposed to be legal, but I have never tried it with Sam and wanted to stay with what I know works with him, so I used Kedem (purple) grape juice. Preheat oven to 375. Mix all ingredients well. (I finally took off my ring and mixed by hand.) Shape into 1 inch balls and place on cookie sheet. Bake at 375 for 15 minutes. Serve warm. These can be made in advance and frozen. Place the sausage balls on a cookie sheet and put in freezer. Transfer balls to a freezer bag when completely frozen. When ready to use, thaw the desired amount of sausage balls and cook as directed above. Note: I adapted this recipe from one that made the rounds when I was growing up and appeared at all parties and church potlucks. I made these for Christmas Eve, but I couldn’t bear to use my precious almond flour and homemade sausage for the extended family who could care less. So I made the old Bisquick recipe for them and they loved it. But, I’m telling you, the SCD recipe was so superior that I was embarrassed to serve the other recipe to guests. I forced myself to live through the embarrassment and the non SCD guests never knew the difference. Just in case you want it: 1 pound sausage, 2 cups grated cheddar, 3 cups Bisquick.
