Coconut water is alkaline and if the urine is made alkaline the uric acid crystals will remain in solution and will be flushed out. Coconut water is very rich in minerals, particularly potassium (check this page <http://www.nutritiondata.com/facts/nut-and-seed-products/3115/2> ) which actually helps eliminate uric acid (you can read it in this article <http://ezinearticles.com/?Gout-Pain-Relief---4-Ways-to-Lower-Uric-Acid & \ id=2166190> ). And in this study <http://www.ecoideas.ca/news_pdf/Study%20on%20Coconut%20Water.pdf> uric acid levels actually went down. What happened to you must've purely been caused by your sugar going up. I began having problems with gout a couple of years ago, a search turned up that a very good way to reduce the levels of uric acid is by taking supplements of potassium citrate or sodium bicarbonate. Either one works for me like a charm.
