I had my Gb surgery about 3 weeks ago but I start getting hungry more often than before. I am glad I had my elective surgery done with no problems. Ice cream, pizza, Cheez-its. My first hot fudge sundae was like sex! But now I don't eat like crazy, because I know there is nothing I can't have if I really want it, so I don't eat out of feeling deprived. Yes, I put on about five pounds over the course of the holidays, and then a two week vacation, but that is on its way off now. I feel really good in general. The tiredness that I was experiencing for a few years is gone. And I am totally pain-free. It has been over two months now, and I feel like I've been given a new lease on life! It melts quickly at room temperature. Simply scoop out what you need and use it normally. Your olive oil will taste fresh until its used up. But then I'm sensitive to the taste of rancidity. I dislike it more than most people. When I buy 3 liters at a time, I notice it degrading at room temperature after a couple of weeks. I also keep my flax oil in the freezer in its original plastic container. I, too buy Spectrum Extra Virgin (Organic). It reaches a mere 80 degrees F during the expeller pressing (according to an email I received from them). It is slightly cloudy and has the best flavor I've tasted in olive oils. The stone pressing is a cool process that does not add heat (room temperature) -=mark=-. I do know that there is a very good one from Frisco area that is Stone ground Extra Virgin. Probably the only one in the states that truly is. Unfortunatley for you, I can't recall the name. From what I hear this oil is tops in flavor and as pure as you can get. Being stone ground it is not heated like expeller pressed oils are. We've been using Napa Valley Naturals (the Rich & Robust kind) which is first pressed, cold pressed, unrefined and chemical free, etc. It's more expensive than what we used to use, but we think it's good quality.
