I don't know where my logic is wrong (if it is), but, since the fat in arterial plaque consists of 74% unsaturated fat, and, of this, 41% is polyunsaturated, that leaves a total ratio of 26% saturated, 30% polyunsaturated, and 44% monounsaturated. Olive oil is mostly monounsaturated, so, if the fat in the plaque is of mostly monounsaturated, why is olive oil so good for us? What am I missing? J.
