Hi . Nice to meet in cyberspace another Ontarian. I'm from Northern

Ontario. Yes, you can use just egg whites, provided you double the egg

whites. I haven't used them in coconut recipes, but it should work just the

same.

I did experiment in the past with egg whites ( when egg yolks were given a

bad rap ) and everything worked well .

Here's the better news. Since egg yolks are actually good for you, there

are ways to clear that and any other allergy that you may have, probably

permanently.

I do Intergrated Energy Psychotherapy and because its basis is Energy

Medicine, it shares many of its structures with Allergy Elimination

work. So I do both successfully and from my experience, the results are

phenomenal and fast. Let me know if you need more info.

You can sub 1/4 cup applesauce for 1 egg; also make a gel of Salba (chia) seeds:

1/4 cup seeds with 1 and 1/2 c warm water-shake well, let sit out for 15

minutes, then refrigerate and use within two weeks. Use  1/4 cup salba gel per

egg. It makes the product a bit chewier, but that's OK with me.

I'll have to try the coconut flour recipes without using any eggs at all (I use

half the amount of eggs, and the other half I sub in the applesauce and salba

gel mix.)  And-I'm actually sensitive to egg whites, not yolks-funny how things

work.

Thanks & Laurie,

I tried doubling the whites Nicolas as suggested in one of the

recipes and it turned out great. I'll try the others too.

I appreciate the help.
