Chantelle-when I try things, I'll let the group know. The book is just called

" Cooking with Coconut Flour " -our library has a lend agreement with several Ohio

libraries, and it took 3--4 months for me to get this book-kind of like a best

seller!

I've looked up coconut flour recipes online, and many of them are icky. Since

you don't normally eat baked goods, you might not care to experiment-but using

c. flour you need to use LOTS of eggs; the flour sucks up moisture and doesn't

hold togethr (I tried using it to make homemade onion rings, and the coating

fell off the onions!)I'm going to see if any of the other egg substitues

(appesauce, chia seeds) will work--but then I like to eat baked goods, and I

like to experiment in the kitchen

Oh no, PLEASE share with the group. My attempts at this have not been great

either. I made one thing and it was just so so to me (I got the flavors

off). The people I made it for liked it and then made me some more to taste

with their own CO (and there¹s was better) but still nothing I felt

compelled to repeat (since I don¹t normally eat or have a craving for baked

goods, etc. anyway)

I should try to get a copy of dr fifes book. I¹ve never tried any of his

recipes and I trust him completely. The recipe I tried was not from his book

chatnelle

I bought this book not too long ago and have been making the muffins. My kids

love them! However, a word of warning. The muffin receipes only make 6 at a

time. We were going on a trip and I thought I would triple that to have enough

to last. A few days into the trip, my kids became very sick, vomiting about

every half hour. I was thinking about everything they had eaten and considered

the muffins. I opened the bag they were in and it smelled awful! This was only

three days after I had baked them. It occured to me that becuase of the high

egg content, these spoil very quickly. I felt terrible, but I just wanted to

post this so others dont make the same mistake. I would keep anything made with

coconut flour (with lots of eggs) in the refrigerator if not consumed

immediately. Btw, I know it wasn't that the eggs were tainted, they were

pastured farm eggs that we had been eating with no problems.

the first place to start for recipes would be getting Bruce Fifes book, he

has lots of good recipes in there....

the next place I would go for recipes, and good ones, is Elena's

Pantry---she is a gluten free cook, cooks mainly with Almond Flour, but does

also

use coconut flour......I'll give you a link to one page for coco flour, but

just put coconut flour in her search engine and you'll get rest......Lots of

people I know get her daily or weekly (??) recipes by email---definitely

good stuff......she's the best......

As far as where to buy, google " buy coconut flour " ----Elena is displaying

a 2.2 lb. bag of coconut traditions coco flour in the picture....she has

links of where to buy.....the one thing you have to remember when cooking

with coco flour is it makes things dryer----you have to add more eggs!!

Thanks for telling us your experience with coconut flour. I'm actually in the

process of reviewing a bag of coconut flour I recevied for free from Tropical

Traditions, on my website. They are the nicest company! I really recommend their

coconut flour.

I love using coconut flour for a variety of things, but have yet to have success

without eggs. Eggs not only provide the moisture and the gluten like abilities,

but it also works as a nice leavening agent to the final product. Please let me

know what happens with your experiments!

So far I've figured that since eggs are high in protein, it will make the final

baked product lower on the glycemic index. The flour itself is already pretty

darn low, with only 8 g of net carbs per 1/4 cup. So far I've made cakes,

waffles, cookies and even enchiladas using coconut flour (coconut flour crepes

for the tortillas!). I have a few coconut flour recipes on my blog, and as soon

as I get the coconut flour review up, I'll have the enchiladas and the waffle

recipe up.

What ever you cook with coconut , it get spoiled after 8 hours. Cook and eat

immediately is the best policy. Otherwise you start vomitting, loose bowl,

and a lot of other troubles start. I live in a part of the world where

coconut is added to every cooking. Keeping in the refrigerator increases its

shelf life, but always eat within a few hours of cooking.

I have used some of the recipes from this page and they worked well. Yes,

quite a few eggs! I have also made a boiled fruit cake using coconut flour

and a bit of almond meal and it also worked well (and was very popular).
