While this is not based on specific research, my understanding is that

children and pregnant women are more sensitive to bitter flavors that may be

more common in some vegetables due to defensive (against insects) natural

plant toxins.

Undeveloped and less than fully developed toxin coping mechanisms in

children suggests that they may not benefit from high exposure to some of

these miracle vegetables we love to love.

If the benefit is from a hormetic response to the toxins, the ever popular

" more is better " may need rethinking even for adults. A little poison could

be good, a lot of poison is just poison. Of course I am not aware of

documented cases of broccoli or spinach overdoses, so I may be full of...

it.

I don't propose that children know best. However, these strong flavor

preferences may not be without basis. I find myself eating and enjoying

vegetables now that triggered a gag response as a child. Childhood aversions

need to be constantly retested.... this is true for far more than taste

preferences. :-)
