Have any of you ever had No Bake Cookies? I love them. They are

awful for you, but I love them. Last night I tried to adjust the

recipe to use VCO and other healthier alternatives and this is what

I came up with. It was surprisingly good. It makes a nice little

treat and it a good way to get a daily does of oil in you. I admit

I am new to a healthy lifestyle in general so please don't totally

blast me if I have some toxic, cancer causing product in there...I

swear I don't know it if I do! :-)

I must admit, I mostly just threw a glob here and a glop there so

these are approximate measures.

1/4 c. virgin coconunt oil (melted at a low temp)

1/4 c. organic agave nectar

2 Tbs. organic cocoa powder

1 tsp. pure vanilla extract

1/4 c. raw almond butter (but it might have been more like 1/3 cup,

I think)

1.25 c. oats

Melt the VCO, add in agave, vanilla, and cocoa powder and mix well.

Then stir in the almond butter until it is well blended. Last, add

the oats. Glop a cookie size amount onto a cookie sheet or

wax/parchment paper and stick in the fridge until it sets. Peel off

the paper or cookie sheet and enjoy! The only heat I used was to

melt the VCO. Then I took the pan off the heat and added the rest.

While I am trying to really adopt a healthier way of living, I still

can't seem to get past my sweet tooth. I know it will get better in

time, but for now this is how I have found to give me a yummy treat

that's not filled with complete junk! The original version of this

recipe calls for 1/2 cup butter, 2 cups sugar, peanut butter, cocoa

powder, vanilla, and 3 cups of oats. I cut it in half, subbed the

almond butter for the peanut butter, agave for the sugar, and VCO

for the butter. Agave is sweeter then sugar so I used much less.

Plus the orginial recipe is WAY sweet so I cut back a little more to

make it less so. Wasn't sure on a sub for the oats, but maybe

chopped nuts would do the trick if you don't do oats? It would take

a lot of them, but it would probably work and be pretty good.
