The IV is the weight in grams of iodine that reacts with 100g of the oil under specified conditions. The larger the IV, the more unsaturated is the oil. Guest guest Posted January 4, 2006 Report Share Posted January 4, 2006 Hi, In some cases IV of Virgin coconut oil is falling in the ranges of 4-4.5 also, in this cases some Govt testing laboratories, are claiming that VCO is adulterated because the range of IV for Coconut oil is :7.5-10.5. What do you say in this regard.
