An index of the degree of unsaturation of an oil or FA is the Iodine Value (also

termed Iodine number) or IV. The IV is the weight in grams of iodine that reacts

with 100g of the oil under specified conditions. The larger the IV, the more

unsaturated is the oil. Here is the iodine value of some vegetable oils:

Oils Iodine value

coconuts 7.5 to 10.5

palm 44 - 58

castor 81 - 91

peanut 84 - 100

corn 103 - 128

linseed 177 minimum

Hi,

In some cases IV of Virgin coconut oil is falling in

the ranges of 4-4.5 also, in this cases some Govt

testing laboratories, are claiming that VCO is

adulterated because the range of IV for Coconut oil is

:7.5-10.5.

What do you say in this regard.
