I'm reposting just in case.. I usually just mix some VCO with whatever food i eat, which is often indian or meditteranean. One dish i really like is a mix of fresh tabouleh, chickpease, spinach, frsh squeezed lemon juice, cilantro sauce, dulce flakes, and fresh sprouted mung beans. the coconut esesence greatly compliments this dish. however..on occasion, i'll add a spoon or two of VCO to a spoon of organic peanut butter and mix it up reall well. then i'll add a scoop...or scoop and a half of cookies and cream icecream..and whip it all together. the VCO turns into these small solids that make this desert delectible! Oh, two other dishes i greately enjoyed were: coconut lime rice. after cooking the rice, i added 1 tbspn VCO, some coconut milk (the canned creamy kind---not the actual coconut milk. And maybe this is not good for you..anyone know???), and then squeezed lime juice and add some salt and pepper to taste! loved it!
