I dont know if you guys got this message of mine..maybe not because

i just hit reply rather than do a 'web post.' I'm reposting just in

case..

I usually just mix some VCO with whatever food i eat, which is often

indian or meditteranean. One dish i really like is a mix of fresh

tabouleh, chickpease, spinach, frsh squeezed lemon juice, cilantro

sauce, dulce flakes, and fresh sprouted mung beans. the coconut

esesence greatly compliments this dish.

however..on occasion, i'll add a spoon or two of VCO to a spoon of

organic peanut butter and mix it up reall well. then i'll add a

scoop...or scoop and a half :) of cookies and cream icecream..and

whip it all together. the VCO turns into these small solids that

make this desert delectible!

Oh, two other dishes i greately enjoyed were: coconut lime rice.

after cooking the rice, i added 1 tbspn VCO, some coconut milk (the

canned creamy kind---not the actual coconut milk. And maybe this is

not good for you..anyone know???), and then squeezed lime juice and

add some salt and pepper to taste! loved it!

And i sliced thinly a sweet potatoe into fries, and cooked them in

VCO, added salt, pepper, and lime to taste. delicious! coconut and

sweet potatoe flavor go well..and the salt really brings out the

flavors!
