Hi Donna,

They are white because the outer green hull has been ground off. You

only eat the meat and milk.

Concern about the need to understand more about the oil contents of green tender

young coconuts (8-month old developing fruit/nut, called 'buko' in the

Philippines) versus the mature, 12 month old nuts, I wish to share to all the

info I got from a reference book (Phil. Coconut Authority 1979). Reported by

Belleza and Sierra (1976), green tender nuts contains an average of 25% coconut

oil (only 35% of mature nuts which has 70 % coconut oil (dry basis). So,

mature bunch of nuts (12-month old) of coconut trees normally has at least 2.5

times more coconut oil compared with the green nuts. And, I believe this

relationship holds true with the lauric fatty acids, coconut is now well known

for. The more oil the higher the content of medium chain saturated C-12 lauric

fatty acids. Logical, is it ?

You know, it takes 12 months for a pollinated/fertilized coconut female flowers

in each bunch of nuts to develop into mature nuts; for an adult fruit-bearing

coconut tree, there are 12-17 bunches harvest annually or at least one bunch

harvested every month.

I found an asian food mart that supplies young coconuts.

Oh I also rubbed a bunch of coconut oil today into my scalp/hair and now

it is so soft and shiny and my scalp feels great! :-)

Fresh coconut, whether young or in the gel stage has a lighter taste than the

dried copra. The main difference I find between the gel and the young meat is

the mouth feel, not so much the taste, although some one with a more sensitive

palate would probably disagree. The gel feels in the mouth like a jelly or

jello, it's tender. And the young meat is more solid to rubber to even fibery

depending on how mature the particular coconut you have is.
