The oil stabilises the effect that the rest of the coconut has and taking one part on its own leads to high sugars because there is no oil with it. To me this highlights the dangers of taking fractions of foods rather than taking the whole thing. On the other hand taking the oil out may be taking out the best part for one particular problem.
