Baked Cod with Garlic and Tomato (4 servings)

4 TB butter, softened and divided

1 large clove garlic, minced

four 8-ounce cod fillets

1 large tomato (about 8 oz) sliced as thin as possible

2 TB dry white wine

1/2 slice low carb bread made into bread crumbs

Cook one TB of butter with the garlic in a small microwave safe cup for 30

seconds, until the garlic begins to color. Mix garlic butter into remaining

butter until incorporated. Preheat oven to 400 F.

Spread both sides of the fillets with 2/3 of the garlic butter and place the

fish in a nonreactive baking dish. Top each fillet with 2 to 3 tomato slices,

overlapping slightly. Spread the remaining garlic butter over the tomato

slices. Pour the wine into the baking dish.

Bake for 10 minutes. Remove the pan from the oven and baste the fish with the

accumulated juices. Sprinkle each fillet with 1 TB bread crumbs. Return the

pan to the oven and bake the fish for another 10 minutes, until the crumbs are

golden brown.

Transfer the fish to a serving platter, spoon the pan juices around the fish,

and serve immediately.

Note: You cans substitute the bread crumbs for slivered almonds or other

chopped nuts.

Each serving: 3.5 net carbs.

Creamy Celery Sauce

1/2 cup sour cream

1/4 cup finely chopped celery

1 tsp ground celery seed

1 1/2 tsp fresh lemon juice

salt and pepper to taste

Whisk together all the ingredients in a bowl. Serve immediately or

refrigerate, in an airtight container for up to four days.

Can be served with Beef Burgers, or as a dip for raw veggies.

2 TB=1 net carb
